A Twist on the Classic American Steakhouse

The hottest new restaurant in Asheville is coming to Grove Arcade. Asheville Proper, which is set to open its doors on Thursday, August 6th, offers a locally-focused modern twist on the classic American steakhouse. Featuring a live-fire cooking experience, their seasonal menu by executive chef and owner Owen McGlynn will feature local and regional ingredients from respected purveyors like Hickory Nut Gap, Apple Brandy Beef, Brasstown Beef, and Abundant Seafood

“We have been working toward opening our doors for the last few months and are excited to finally be able to welcome our neighbors and visitors to Asheville Proper,” says McGlynn. “Times are unusual, but there is still comfort in sharing a meal with others and we look forward to creating memories with all of you around the dinner table.”

About the Owner

Owner Owen McGlynn, former executive chef at Storm Rhum Bar & Bistro and sous chef at High Cotton in Charleston and Greenville, SC, brings to the table 20 years of experience in the restaurant and hospitality industry. “Working as an executive chef for the last eight years in Asheville has taught me so many invaluable lessons, and I want to be able to take what I have learned and share it with the community I love through Asheville Proper,” McGlynn said in a statement to Asheville’s Citizen TImes. “I look forward to showcasing how fun and delicious it is to cook over a flame powered by wood; it’s truly an art form that deserves to be shared.” He and his wife Mindi McGlynn along with Russel and Mercy Joseph are partners on the venture.

What to Expect

Asheville Proper’s live-fire cooking experience will showcase an open custom grill providing views of executive chef McGlynn and his team cooking various cuts of premium meats, including cowboy ribeye, NY strip, double-cut pork chop, and porterhouse for two. For sides, guests can enjoy the live-fire flavor of smashed fingerling potatoes, flame-roasted brussel sprouts, and whipped potatoes. Small plates will include charred pickled shrimp, smoked cauliflower and embered squash soup.

The atmosphere at Asheville Proper will be a feast for the senses. Orchestrated by Interior Designer Ashley Diggelman and inspired by Art Deco style to keep with the history of the historic Grove Arcade, the open floor plan will showcase travertine flooring and alabaster walls accented by modern details, wood elements, and an eclectic mix of 1920s-inspired lighting. Guests will dine on upholstered dining chairs and velvet banquettes, providing a comfortable atmosphere while crackling flames leap up from the grill in the distance.

As Asheville Proper opens its doors, safety and health for guests and employees remain top priority, and protocols are in place to follow all recommendations from the CDC and the NC Department of Health and Human Services.
